The "mascots" of this type of carving, most of which is done using twigs and branches as raw material,
are
roosters of all shapes and sizes. Some are tall and thin. Others are short and stocky. But if
you're not interested in carving a rooster, there are quite a few other things you can carve.
Herons/Egrets are somewhat trickier to carve than are roosters. You have to be very careful doing
those long, thin legs and the curved neck.

Roadrunners -- maybe not the real New Mexico type, but at least the kind that "Beeb, beeps!"
These little spiraled-branch trees are whittled from straight little knotless birch branches. These
particular twigs were between 1/8 inch and 3/16 inch in diameter.
